Ingredients
- 1 pound catfish meat
- 1 tablespoon red curry paste
- 1/2 cup coconut milk (add 1/4 cup water)
- 1 tablespoon fishsauce
- 1 tablespoon sugar
- 2-3 fresh chili sliced in half (optional)
- kaffir lime leaves (cut small)
- 2 tablespoons garlic minced
- 3 tablespoons cooking oil
Cooking Time!
- In saucepan, with oil brown garlic, add curry paste, stir well
- Add coconut milk, add catfish stir well
- Add fishsauce, sugar
- Cover and let simmer for 5 mins or till the catfish is cook, sprinkle with kaffir lime leaves
- Taste and add if needed
- Serve with rice
